Flatbread Spinach Salad Pizza


Preheat the oven to 400 deg F. Sprinkle a little water on 2 pre-baked Wholewheat Naan Bread and bake on a cookie sheet for 5 minutes or until piping hot.

In a large bowl, combine 2 cups loosely packed baby spinach (hand shredded), 4-6 thinly sliced olives, 1 small grated or shaved carrots and 1/4 cup Asiago cheese or Parmesan cheese. Toss together with 1 tablespoon olive oil and 1/2 teaspoon freshly squeezed lemon juice. Season to taste with salt and black pepper.

Once the naan bread comes out of the oven, pile the salad on top. Cut and serve immediately. Refrigerate any leftovers.

Serves 4 as an appetizer or 2 as a main dish!
